2 large beetroots, finely chopped 2 onions, finely chopped   2 green chillies, finely chopped 2 tbsp coconut oil 1 tsp mustard seeds 1/2 tsp cumin seeds 1 dry red chilli 2 sprigs curry leaves 1/2 tsp ginger, grated 1/2 tsp turmeric powder 1 tsp coriander powder Salt, to taste 4 tbsp coconut, grated

Heat the coconut oil in a wok, then add mustard seeds, cumin seeds, dry red chilli and curry leaves.

Once they stop spluttering, add the ginger paste and onions. Saute for 2 minutes.

Now add the chopped beetroot, salt, turmeric and coriander powder.

Mix well and continue cooking while stirring occasionally until the beets are almost cooked.

Now add the coconut, mix well and cook until done.

Garnish the beetroot thoran with more curry leaves and grated coconut and serve hot.
